I've been thinking EXACTLY the same thought... the rise and rise of the Flat White.
I think Costa prompted Starbucks into action, as they did lots of signs outside (and maybe ads too).
And it's now the FIRST thing on the Costa menu behind the till I was in today.
And the genius thing... it's not about what's there, it's about what's not.

I actually overheard the thought in Wiltons on the weekend. Middle class boyfriend to middle class girlfriend "why do you think independent coffee places have got so big so quickly?" middle class girl friend to middle class boyfriend "I don't know but it all seems to have happened since flat whites came along". Not that I've got anything against middle class boyfriends and girlfriends. Or flat whites.
Like the 'we give you less you buy more' thought. It's less product but more perception of a quality beverage though don't you think? It's the whole artisan thing. Like the take off of fixed gear and single speed bikes, hand crafted stuff that's not mass produced. We all want to be the same as everyone else, but slightly different at the same time.
Same same but different as they say in Thailand.
